1) Jerry said that you always fill the cheese wheel, so put hearts on the minion wheel if there is no cheese left. Only the heroes miss out on new cheese if it runs out. It hasn't happened to me yet. We came close once.2) yes all abilities carry over.
3) a mouse only picks a new ability the first chapter they play in. To earn a second ability you need to level up.

5) yes, each chapter you can pick new mice. Some chapters require you to pick a certain mouse.
